Bernard and I had a sudden desperate need for cake this evening and decided it was as good a time as any to christen our new kitchen!
So banana and chocolate cupcakes were made, a fail safe family favourite, made in minutes, no fuss and all in one mix that can be made in minutes with a mixer! Thought it might be nice to share the recipe that is not any of the cakes – make your own!!)
200g caster sugar
200g self raising flour ( I should add that we used rice flour with extra baking powder so they are gluten free cakes!)
1teaspoon baking powder
2 tablespoons milk
1 teaspoon vanilla essence
3 mashed ripe bananas
chopped dark chocolate
Put all the ingredients (not the chocolate) in a bowl or processor and whisk away until frothy and batter like!
Use either a loaf tin or muffin cases as you prefer and evenly divide the mixture. Sprinkle the chocolate over the top and bake in a pre heated oven at gas mark 4 (180 degrees) until golden brown and firm when you press down on the top!
