A tasty ‘non chicken’ casserole

It’s definitely the right weather for tasty warming dinners and this is a family favourite in our house. We have a gluten intolerant carnivore hubbie, a vegetarian mummy and eat anything teenager, so making just one dinner can be a bit tricky at times!

A non chicken casserole always goes down well with everyone!

You’ll need –

A packet of Quorn chicken style pieces

Half a tub of cream cheese with sweet chilli (we tend to use supermarket own brand as it’s cheaper!)

Vegetables – again use your family favourites, we always have something very colourful just brighten up a dark winter evening or failing that – whatever is left in the fridge from last nights dinner! For this version we have green beans and carrots

 

 

 

1 -Fry of the quorn pieces (straight from the freezer) in a little hot oil  top brown it off.

2- Whilst this bit is going on, par boil the veg in a little boiling water until just soft.

3- Stir the cream cheese and a touch of milk into the Quorn and allow it to melt into a yummy gooey sauce (that’s my Nigella moment!)

4- Stir in the cooked vegetables and cover and simmer for about 20 minutes!

5- We served ours tonight with creamy mashed potatoes, but jacket spuds, pasta or rice do just as well! –

(Sweet peppers, mushrooms and red onions can be a good substitute veg if you like – and make a sort of non Chicken a la king!)
