So here we are in week 2 of the great bake off and the competition is looking pretty stiff to be honest!
The wonderful Mummy Mishaps and The Crazy Kitchen are doing a sterling job as hosts and I’m loving all the yummy things people are making !
It was bread week this week, and I was a bit torn as to what to make, so we thought we’d go for something we’ve not tried before – Savoury Monkey Bread
I made up a standard batch of wholemeal bread (would have been white, but I misread the flour bag in the supermarket!)
2 teaspoons salt
2 teaspoons dried yeast
14fl oz warm water
And yes I know it’s in old measurements, but that’s how old my recipe book is!
So mix and knead, like normal
Grease a loaf tin with a little olive oil and re heat the oven to gas mark 7
Divide the dough into small quantities and flatten out, add a small cube of cheese to the flattened dough and roll it back up to surround the cheese.
Pack the balls into the loaf tin and leave to rise in a warm place! until it doubles in size.
Once it’s risen brush with more olive oil and bake it in the oven for about 35/40 minutes until it’s golden brown
Tear and share Savoury Monkey Bread – With gloopy cheese in every bite
I asked the party of teenagers in my garden to taste it for me – now there’s none left! Oh well – have to make some more I guess!
I had some dough left over so decide to have a bit of a play! So using my miniature loaf tins I divided it up and flavoured each one differently
Poppy seed, chilli, pesto, parmesan cheese, and rosemary
I’ve hidden these from the teenagers – just in case!
