Well here we are at week 5 of 52 cook books already! Seems to have been going on for such a long time and yet I still have 47 left to go ….and new cookery books arriving in the house all the time!
Back to an old classic this week. Fond memories from my childhood include watching Farmhouse Kitchen with my mum, after lunch I think it was. There are clips on you tube if you fancy a giggle – and yes I know how old it makes me! One of the many things I inherited from my darling mum was her Farmhouse Kitchen cookbook. A compilation of their own recipes and those sent in my viewers. I think maybe mum collected it over a number of weeks, given it’s nature and the fact that there are some pages missing and some duplicated.
So this week – Somerset Apple cake (and don’t ask about the apples I bought at the beginning of the week to make this…..He knows what he did!)
So having bought new apples (eater on this occasion because there where no cookers at the corner shop). And of course GF flour (although it would serve him right if I made it with gluten flour!!).. I set about making something yummy!
A little panicked by the lack of mixture, a 9 inch tin seemed very big and there was a lot of apple to comparatively little mixture. But we must have faith in the most high and knowledgeable Mrs Berry! And she was right!
The mixture rose to fill the tin and the apple/mixture ration was just right!
Light soft spongy filling with juicy fruit pieces and crisp outer crust! And whilst it was still warm… a cheeky splodge of cream for my dessert at lunch time!
I did also add a touch of mixed spice – because in my mind there is nothing quite as good at bringing out the flavour of apples as a little nutmeg and cinnamon.
