52 cook books – Week 7 is here and we have a yummy dinner and enough for a leftovers lunch box!
I make no bones about the fact I’m a big fan of Nigella and her recipes are very good – unless you’re on a diet of course! I have several of her cook books and the Christmas has some very well thumbed pages! For this week I’m using Nigellas Express. A whole heap of quick and easy recipes for when you’re in a hurry. We have used it before, the breakfast bars have been a regular bake to put in lunch boxes but we’ve never made this dish before!
With Badger on a gluten free diet lunches at work are never as easy as a sandwich from the local deli or even something hot from the school canteen! GF bread is a horrendous price and so he tells me frankly icky! So we tend to plan meals so that there is something as leftovers to make an easy lunch with. This week a variation on Badger and Bernard favourite – Sticky Drumsticks.
This week we decided to try her Maple Chicken and Ribs – only without the ribs!
It was bound to be a favourite with the family and gave me a good excuse to buy some maple syrup – so pancakes for breakfast on Saturday!
Again – I won’t repeat the whole recipe here (it is available on line on her web site) but the basics are maple syrup, soy sauce and apple juice. We used chicken drumsticks rather than thighs – supermarket bargain of the week. Sealed in a bag on the fridge overnight with the marinade and then roasted in the oven for 40 minutes. It got a huge thumbs up from the family, served with rice, peas and green beans.
And the leftovers? Well with the meat stripped of the bone and the rice, peas and sticky gooey sauce from the chicken dish has made a yummy rice salad for Sirs lunch today!
