It’s been an emotional week here. I went on a random search for a recipe for this weeks 52 cook books yesterday, It happened to be my mums birthday so I thought I’d use one of her books in memory of her!
As I pulled the book off the shelf a handful of papers fell out and there was a series of scribbled recipes in her handwriting. So after a bout of sobbing and ringing my dad to tell him about it, I set about making one of the recipes she had thrown at me!
I would credit for it, but have no idea where she got it so apologies for stealing what might be someone elses work.
6oz porridge oats
6oz plain flour
6oz brown sugar
8oz chopped dates
1 cup of water.
Put the chopped dates in a pan with the water and warm gently on a medium heat until soft. (my darling MIL suggests using orange juice instead of water to add an extra yummy taste)
Melt the marg/butter and mix in the dry ingredients in.
Line a shallow tin with greaseproof paper and spread half the oat mixture on it.
Drain the residue fluid from the dates and spread them over the oats.
Top with the other half of the oats and bake for about 25 minutes at 180.
Yummy! And my version is completely gluten free! So with a cup of tea and a small slice as a snack – here’s to my darling mum and her need to horde recipes!
