I’ve reverted back to a “piece of paper” recipe for week 11 ! Another one of the hoard of clippings and scribbled notes with ingredients on! And as my BFF is coming to stay for a girlie weekend whilst our boys go off and play silly buggers for a couple of days, it seemed a good idea to make something sweet ad gooey ready for an evening of pizza, white wine and chick flicks!
Simple – chilled cheesecake with added crunch!
150g bourbon biscuits crushed
50g butter melted
300g cream cheese
175g melted honeycomb chocolate (I used a Malteser bar)
200ml softly whipped cream
25g dark chocolate for shavings
MIx the melted butter and crushed biscuits together ad press into a 7 inch spring form cake tin. Set aside i the fridge to set
Beat the cream cheese until soft and gently mix together with the whipped cream.
Fold in the melted chocolate and spread over the biscuit base evenly
Leave to set for about 3 hours i the fridge and then sprinkle with the grated dark chocolate.
Lock the door – don’t invite any friends round ad don’t share!
Cut into reasonable slices and serve maybe with a few strawberries if you have them and a glass of chilled Chablis whilst enjoying a weepy movie.
Now my 7 inch cake tin got dropped last week and is no longer round so I had to stretch to a larger tin – hence the thinner layers – but I bet it tastes bloody lovely!
So much for healthy eating ahead of my marathon trip to Scotland next week!
