After our adventures in Scotland (and please don’t anyone ask about the beach pictures!) I’m back and cooking! I’m signing up to slimming world this evening so I’m busy emptying the kitchen of everything sweet and sticky. This recipe was one downloaded from the web some time ago in a attempt to find yummy gluten free puddings for my dear old man! So here they are Banana Pancakes for 52 cook books week 13
Easy peasy pudding with only 3 ingredients.
1 1/2 over ripe bananas
1/4 teaspoon of baking powder
(we added a couple of teaspoons of cornflour to stiffen the mixture a bit)
Beat the eggs with the baking powder and add the bananas well mashed.
Cook on a hot griddle (or frying pan with some spray oil) and serve hot with maple syrup!
Well we didn’t have an maple syrup but a cunning jar of toffee sauce from a Christmas hamper will do just nicely!
I have to say they were a bit floppy and did’t set too well, so i cheated and added a couple of teaspoons of cornflour to make the batter a little thicker.
They taste amazing, but are quick to burn (as you can see) so watch them carefully! I’m going to try some more over the weekend with different toppings….well the others are going to have toppings I’ll just have pancake!
