I’m trying to be good with what I eat – at Easter – when the shops are full of chocolate! What was I thinking! So best foot forward with 52 cook books and low fat, good for you food! Not a chocolate egg filled with sweet gooey fondant! Lucky me!!
Having joined slimming world again I decided this week it should be a healthy, vegetarian dish, and while I know it might sound an odd combination, it tastes ruddy lovely!
650g aubergine, peeled and cut into 1 inch cubes
2 medium onions
Low calorie oil spray (less than one calorie per spray)
1 clove garlic, finely chopped
5 hard-boiled eggs, shelled and halved
Salt and black pepper
Put the aubergine cubes in a salad spinner, sprinkling each layer with salt. Leave for 30 minutes, then rinse and spin dry.
Heat the low calorie oil spray in a pan, add the onions and fry very gently for 8 minutes with a lid on. Add a little water if the pan dries out. Uncover and cook steadily until golden brown.
Add the aubergines and garlic, stir well, then cover and cook for 15 minutes, or until the aubergine is absolutely tender (again, add a little water if the pan looks too dry).
Tip the contents of the pan into a food processor, add the eggs, black pepper and salt and pulse until finely chopped – like a coarse liver paté. Turn into a terrine or shallow dish and chill thoroughly until required.
