Something a bit different this week! I was asked recently to join in a competition with Uniform Dating and Foodies100. They have been looking at the favourite foods of people who where a uniform for work as part of the launch of a new app.
I’ve chosen a job close to my heart – Nursing! I spent many happy years on the wards as did Badger, our lovely Crown Street girls and in September our little girl Bernard is off to university to start her paediatric nurse training. Their research shows that the favourite dish of nurses is salad (came as a bit of shock to me – I lived on biscuits and toast as the easiest and quickest way to eat between shifts and patients!
So we have our own take on a vegetarian classic – tabbouleh (tabouli)……….but for us – it’s……..
1 packet of lemon and coriander couscous
4 inch length of cucumber roughly chopped
3 spring onions chopped
1/2 a red pepper roughly chopped
rocket, water cress and baby spinach leaves
1 courgette (cut in half and then sliced lengthways
1 packet Halloumi cheese sliced lengthways
salt and pepper to season
Follow the instructions to cook the couscous and set to one side to cool
Heat a heavy bottomed pan and add a teaspoon of olive oil.
Fry the slices of courgette and halloumi until they are a lovely golden brown and then set aside to cool.
Mix together the couscous, cucumber, pepper and onions and put them it into the centre of a dish with a selection of the leaves
Add the halloumi and courgette arrange as you like and season with salt and pepper or even a drizzle of olive oil if you like! We’re lucky enough to have had some brought home from Spain recently – fresh picked and pressed and it’s so much better than anything out of a bottle! fresh, peppery and full of the taste of sunshine!
There is nothing quite as lovely as halloumi cheese!
Now in deference to everyone I know who is still nursing and just to make Jess and Ciara smile – I have also made a dish of my fail safe nurses salad – just for those long long night shifts!
