Whilst as a vegetarian I can’t quite comprehend the need for bacon, I can comprehend the reaction it gets in my family, I’m fairly sure they’d do anything for bacon, and once you add cheese into the mix, well…. they’d probably do anything for you.
Read on to the end if you are a veggie – it gets better.
So whilst hunting through recipes I found one for bacon and cheese muffins – what could be better, cake, meat and cheese….. happy husband…..happy teenager! So adaptations for gluten free hubbie, adaptations for spur of the moment cookery and limited contents of the cupboard and here we go
3 rashers of smoked bacon bacon, cooked but too crispy and chopped into small pieces
5oz cubed cheddar cheese
5oz of Gluten free bread crumbs (normal bread if you are lucky enough to be able to!)
1/2 a red onion finely chopped
1/2 teaspoon basil
1 crushed garlic clove – or equivalent
mix all the ingredients together and divide amongst greased muffin tins or pudding dishes
Cook in a preheated oven (190 degrees / gas 5) for about 25 minutes until risen and golden brown
They made for a tasty treat last night and his lunch today (note to self buy more bacon and get better at hiding things!) But I can see that they would make a excellent lunch box filler for school or a picnic.
And for those of you, like me, who are vegetarian…they work just as well with Quorn bacon style rashers or Chorizo style slices (their ones smelled too good not to try them myself!)
