I know there is a week missing! Blame work load ad Britmums live – there are only so many hours in a day and I just ran out of time! But here we go – 52 cook books – week 25
I’m a convert convert to fish (30 of saying i don’t like it!) So I’m trying some different version to test my taste boundaries – so based on a recipe from a magazine clipping here is my yummy fish pie – demolished by the family for dinner tonight with a lovely glass of Lindermans thanks to BML!
4 large baking potatoes
1 packet of trimmed green beans
1 tin sweetcorn
500g baby carrots
3 medium sized salmon steaks
3 medium sized white fish stakes
1 1/2 pints of cheese sauce (approx)
Put the fish on a baking sheet and season with a little salt and pepper. Cover with a tine foil lid and bake for about 20 minutes at 180 degrees
While thats cooking chop, cook and mash the potatoes (I used a little of the sauce for mashing purposes!
Steam the vegetables until just tender
Once the fish has cooked flake it into bite sized pieces.
Put the vegetables in the bottom of an oven proof dish and place the fish on the top.
Pour most of the sauce over and gently stir together. I say gently only so the fish doesn’t fall apart too much.
Pour over the last of the sauce ad top with mashed potatoes. Score with a fork to create the ridges that go so crispy and yummy in the oven.
Bake at 200 for about 35 minutes and serve straight away.
Completely delicious! It’s a good way of using left over vegetables too – use whatever id lurking in the bottom of the freezer – recipes should only every be guidelines not rules!
